The effect of ambient scent on time spent in retail stores: The mediating role of consumers’ shopping mood

Iedereen gaat al wel eens graag gezellig winkelen, rustig iets eten of in aangename sfeer iets drinken. Let vooral op de woorden ‘gezellig’, ‘rustig’ en ‘aangenaam’. Want ja, we zijn allemaal steeds veeleisender aan het worden in hoe het ergens moet zijn of aanvoelen, vooraleer we het echt naar ons zin hebben. Het is dan ook een heuse opdracht voor zaakvoerders om hun klanten tevreden te stellen en te houden in deze steeds meer en meer veranderende koopomgeving. Een opkomende trend in vele winkels is dan ook het gebruik van zintuiglijke prikkels zoals licht, kleur en geur. Vooral voor die laatste is er recentelijk veel aandacht. Want wat kan nu het effect zijn van het aanbrengen van een geur in een winkelruimte of horecazaak? Worden klanten daar gelukkig van? Komen klanten daardoor terug? Blijven klanten langer? Spenderen ze meer? Allemaal vragen die de academische wereld aan het werk zette.

Het gebruik van geur

In mijn thesis ging ik na of het introduceren van een geur in een ontbijt- en lunchbar de tijd dat de klanten daar spenderen beïnvloed. Ik onderzocht deze relatie aan de hand van de gemoedstoestand van de klant. Immers, volgens de wetenschap heeft geur een sterke invloed op onze gevoelens. Onze reukzin is namelijk rechtstreeks verbonden met dat deel van de hersenen dat emotionele reacties controleert. Extra elementen die eventueel kunnen meespelen in deze relatie werden ook in rekening gebracht tijdens het onderzoek, met name de volgende drie: de loyaliteit die de klanten hadden tegenover de zaak op het moment van het onderzoek, de drukte of gevoelsdrukte in de zaak en de motivatie waarom ze een bezoek brachten aan de bar. Loyaliteit en drukte zijn twee eerder simpele en logische factoren. De motivatie die een klant heeft om een zaak te bezoeken ligt niet zo voor de hand liggend. Maar denk zelf eens na, gaat u ergens gaan eten puur omdat een mens moet eten, en dus puur voor de basisbehoefte? Of doet u het eerder voor de sfeer, het leuke, het aangename? Zo komen we natuurlijk weer bij de inleiding van dit artikel, de consument wil tegenwoordig niet enkel iets simpel, niet enkel de basisbehoefte, maar veel meer. De motivatie die dan achter een bezoek aan een ontbijt en lunchbar schuilt, kan dan duidelijk een verschillende invloed uitoefenen door de aanwezigheid van een geur

Onderzoek in koffiebar

Het onderzoek zelf werd gehouden over twee opeenvolgende weken. De eerste week werd er geen geur geïntroduceerd in de ontbijt- en lunchbar. De tweede week werd er een vanillegeur verspreid in de bar. In beide weken werd tijdens dezelfde dagen (dinsdag, donderdag en vrijdag), dezelfde procedure uitgevoerd. Gedurende drie dagen per week vroeg ik elke klant, bij het afrekenen van hun bezoek, een vragenlijst in te vullen die vroeg naar hun gemoedstoestand tijdens hun bezoek, hun mate van loyaliteit ten opzichte van de bar, de gevoelsdrukte in de bar, hun motivatie om de bar te bezoeken en of ze werkelijk gedaan hadden waarvoor ze naar de bar gekomen waren. Een voorbeeld hiervan kan zijn dat klanten enkel de bar gingen bezoeken om een koffie te drinken, maar dat ze uiteindelijk langer bleven om ook iets te eten. Bij dit voorbeeld kwam de intentie dus niet overeen met wat ze werkelijk deden. Naast deze vragenlijst hield ik zelf ook bij hoe lang elke klant verbleef in de bar, dit door aankomst en vertrekuur te noteren. Aan de hand van de verschillen in resultaat tussen de eerste en de tweede week, waar wel een geur aanwezig was, kon ik nagaan of het daadwerkelijk een effect had op de gemoedstoestand van de klant en hun gespendeerde tijd.

Resultaten

Aangezien de beperkte omvang van dit onderzoek bleven zeer significante resultaten echter uit. Toch kon er een duidelijk positief direct effect teruggevonden worden van de aanwezigheid van de vanillegeur op de tijd die klanten spendeerden in de bar. Dit is natuurlijk van groot belang voor eigenaars van dergelijke horecazaken. Hoe meer tijd klanten spenderen in een zaak, hoe meer geld ze vaak ook spenderen. Ook de gemoedstoestand van de klant bleek een positieve factor te zijn in de relatie tussen een geur en de tijd dat werd gespendeerd. De drie andere factoren die mee werden opgenomen bleken geen enkel effect te hebben.

Dit onderzoek is een eerder beperkt onderzoek geweest. Het werd uitgevoerd in een kleine lokale bar en men ging enkel na wat het effect was van het toevoegen van een geur in een commerciële ruimte zonder enige andere zintuiglijke elementen mee in rekening te brengen. In realiteit bestaat een ervaring natuurlijk uit een combinatie van meerdere elementen. Kortom, het is een klein maar relevant onderzoek geweest, wat nog veel ruimte laat voor verder onderzoek.
