De invloed van emulgatoren en redoxagentia op de broodbereiding en - veroudering

Waarom worden broodverbeteraars gebruikt en hoe werken ze?

 

Brood is sinds duizenden jaren een van de belangrijkste onderdelen van de voeding van de mens. Het is een belangrijke bron van koolhydraten, proteïnen (eiwitten), vezels, mineralen, verschillende B-vitaminen en vitamine E. De populariteit van brood is niet enkel toe te schrijven aan zijn voedzaamheid, maar tevens aan het feit dat brood een ‘convenience’-product is (het is ‘kant en klaar’ en direct geschikt voor consumptie). Vers brood heeft unieke sensorische eigenschappen zoals smaak, aroma, de textuur van het zachte broodkruim en de krokante korst. Vandaag de dag gebruikt elke bakker broodverbeteraars. Aangezien de gemiddelde Vlaming heel wat brood consumeert, namelijk 50 kg brood per jaar, is het interessant om te weten waarom broodverbeteraars gebruikt worden en hoe ze werken tijdens het bakproces en de bewaring van brood. U consumeert ze immers elke dag!

 

De consument wil graag doorheen de dag een breed assortiment vers brood. Dit is echter niet gemakkelijk haalbaar. Zo zijn de deegeigenschappen niet steeds zoals de bakker het wenst. Het deeg kan te kleverig zijn waardoor het aan de machines blijft kleven en moeilijk handelbaar is. Het kan echter ook te droog zijn. Soms is het deeg te sterk of te zwak, het zakt te veel in ten gevolge van de trillingen van machines, het deeg ontwikkelt zich te traag, het deeg is niet consistent genoeg… Ook de eigenschappen van het brood zijn niet steeds zoals de consument het wenst: het kruim scheurt bij het smeren van de boterham, het kruim is te open waardoor bijvoorbeeld confituur door de openingen vloeit… Bovendien veroudert brood snel. De belangrijkste negatieve veranderingen zijn kruimverharding, korstverzachting en veranderingen van aromakarakteristieken. Broodveroudering is verantwoordelijk voor grote jaarlijkse economische verliezen: 3 tot 8 % van alle geproduceerde brood wordt ongeschikt voor consumptie. De mechanisatie, groteschaalproductie en de vraag van de consumenten naar een hogere kwaliteit, ‘convenience’ en bewaarbaarheid van brood maakte het gebruik van broodverbeteraars noodzakelijk om deze doelen te bereiken.

 

De kwaliteit van bloem voor de bereiding van brood wordt grotendeels bepaald door de proteïnen. Ondanks uitgebreid onderzoek op glutenproteïnen (dit zijn de belangrijkste proteïnen voor de broodbereiding) zijn hun structuur en rol tijdens broodbereiding en –veroudering nog steeds niet volledig opgehelderd. De scriptie heeft tot doel een groter inzicht te krijgen in het fysico-chemisch gedrag van de glutenproteïnen tijdens de deegvorming, de broodbereiding en de broodveroudering. Hiertoe werd gewerkt met twee types broodverbeteraars, namelijk emulgatoren en redoxagentia. De invloed van deze broodverbeteraars werd telkens op drie verschillende aspecten nagegaan. In eerste instantie werd het effect op de deegeigenschappen nagegaan. In een volgend stadium werden twee deelaspecten onderzocht, namelijk het broodvolume en de cellulaire kruimstructuur. Het broodkruim werd telkens met twee verschillende technieken geanalyseerd. Ten derde werd ook de broodveroudering opgevolgd door het meten van de hardheid en de elasticiteitsmodulus (dit is een maat voor de stijfheid) van het kruim op verschillende tijdstippen.

 

Emulgatoren zijn moleculen die zowel waterminnende (hydrofiele) als vetminnende (hydrofobe) eigenschappen bezitten en dus oppervlakteactief zijn. In de cosmetica worden emulgatoren bijvoorbeeld in crèmes gebruikt. Een crème bestaat grotendeels uit een emulsie van vet in water of van water in vet. Zonder emulgator zou de olie op het water blijven drijven. De emulgatoren die in de bakkerij worden gebruikt, zijn in staat het deeg te versterken en/of het broodkruim zachter te maken. Het deegversterkend effect is vooral het gevolg van het oppervlakteactief karakter (zowel waterminnend als vetminnend) van emulgatoren. Hierdoor kunnen ze de waterminnende en de vetminnende delen van de glutenproteïnen stevig met elkaar verbinden, waardoor het deeg steviger wordt. Dit maakt het deeg toleranter voor de bakker: het deeg is minder gevoelig aan schokken en trillingen, het bakproces is minder tijdsgevoelig…

Toevoegen van emulgatoren resulteert in fijner broodkruim (dit is bijvoorbeeld zeker gewenst bij toastbrood). Door de oppervlakteactieve eigenschappen van de emulgatoren zijn de gascellen in het deeg meer gedispergeerd (verdeeld). Tijdens het rijzen zal het koolstofdioxidegas, dat geproduceerd wordt door de gist, migreren naar deze gascellen. Uiteindelijk zal een brood resulteren met veel kleine gascellen. Bij afwezigheid van emulgatoren zullen er minder maar grotere gascellen zijn.

Broodveroudering wordt deels veroorzaakt door de kristallisatie van zetmeel. Tijdens de bewaring worden zetmeelkristallen gevormd, waardoor het broodkruim hard wordt. Bij toevoegen van emulgatoren zullen deze complexen vormen met het zetmeel. Deze zogenoemde inclusiecomplexen kunnen niet meer kristalliseren, waardoor het brood langer zacht blijft.

 

De glutenproteïnen zijn belangrijk voor de typische visceuze en elastische eigenschappen van deeg. Deze eiwitten kunnen gezien worden als een wirwar van ketens die vertakkingen vertonen. Vele uiteinden van deze ketens bevatten sulfhydryl groepen (deze groepen bestaan uit een zwavelatoom en een waterstofatoom:–SH). Typisch hiervoor is dat twee sulfhydrylgroepen een disulfidebinding (twee zwavelatomen met elkaar verbonden:

-S-S-) kunnen vormen. Dit verleent stevigheid en elasticiteit aan het deeg. De vorming van disulfidebindingen wordt bevorderd door toevoegen van oxidantia. Het deeg wordt dan steviger en dit heeft consequenties op het broodvolume, de kruimeigenschappen, de broodveroudering… Het terug omvormen van disulfidebindingen tot twee sulfhydrylgroepen wordt bevorderd door reductoren. Het deeg wordt vloeibaarder, minder viskeus en kleveriger. In de scriptie worden twee oxidantia gebruikt, namelijk jodaat en bromaat. Als reductor wordt glutathion gebruikt.

 

De twee broodverbeteraars werken op een totaal verschillende manier. Emulgatoren oefenen hun effect vooral uit via elektrostatische effecten. Ze hebben geen invloed op covalente bindingen, zoals disulfidebindingen. Redoxagentia daarentegen beïnvloeden de glutenproteïnen vooral door in te grijpen op de disulfidebindingen van het glutennetwerk. Deze complexe mechanismen maken het deeg toleranter voor de bakker, verbeteren de broodeigenschappen en verlengen de bewaarbaarheid van brood. Broodverbeteraars zijn dus noodzakelijk in de huidige maatschappij.
