Bioactieve componenten in functie van genetische diversiteit, oogsttijdstip en verwerking in Allium porrum L.

Prei is een typisch Vlaamse groente waar de Vlamingen trots op mogen zijn. Nu meer dan ooit, want uit recent onderzoek is gebleken dat prei heel wat bioactieve componenten bevat.

De studie werd uitgevoerd aan het Instituut voor Landbouw- en Visserij Onderzoek (ILVO) te Melle door onderzoekers Nathalie Bernaert (doctoraatsstudente UGent) en Lien Goetghebeur (masterstudente Hogent). Zij stelden vast dat prei heel wat stoffen bevat. De groep componenten omvat o.a. zwavelverbindingen, polyfenolen en antioxidanten. Antioxidanten zijn reeds gekend voor het vertragen van het verouderingsproces.

Uit eerder onderzoek, bvb. op broccoli en tomaten, is gebleken dat deze bioactieve componenten bevorderend zijn voor de gezondheid. Zo beschermen ze tegen hart –en vaatziekten, kanker en andere aandoeningen.

De zwavelverbindingen komen vooral voor in het witte gedeelte van de groente. Het zijn die verbindingen die ervoor zorgen dat je ogen gaan tranen bij het versnijden van ui, maar dus ook bij prei. Polyfenolen en antioxidanten zijn aanwezig in een breed gamma aan fruit en groenten, maar ook in rode wijn. In prei zijn ze vooral terug te vinden in de groene bladeren.

Jammer genoeg belanden die bladeren vaak in de vuilnisbak bij de consument of worden ze enkel gebruikt in de soep. In het onderzoek werd dan ook gezocht, met succes, naar nieuwe manieren om het groen van de prei te verwerken in voedingsmiddelen. “Met deze studie willen we het imago van prei als saaie groente verbeteren.” zegt Goetghebeur in haar thesis.

Niet alleen werd vastgesteld dat prei veel bioactieve componenten bevat, ze werden ook onderzocht in functie de genetische diversiteit, het oogsttijdstip en enkele verwerkingstechnieken.

Daaruit blijkt dat er een grote variatie is in gehaltes aan zwavelverbindingen binnen de genetische diversiteit van prei. Voor de grootste hoeveelheid zwavelverbindingen oogst je het best in september. November is de minst goede maand om prei te oogsten. Dan gebruikt de plant deze zwavelverbindingen om zichzelf te beschermen tegen invloeden van buitenaf.

In de studie worden verder enkele droogtechnieken vergeleken en hun effect op de inhoud aan bioactieve componenten in prei. Daarin kwam duidelijk naar voor dat vriesdrogen een goede techniek is voor het behoud aan zwavelverbindingen, terwijl luchtdrogen het dan weer goed doet voor het gehalte aan polyfenolen en antioxidanten.

Een ander experiment uit de studie bestudeert de invloed van blancheren, koken en stomen op de antioxidantcapaciteit. Blancheren gaf de minste verliezen en is dus een goede bewaartechniek. Om je prei gaar te maken, is stomen een goede bereidingstechniek. De groente is sneller gaar en er zijn minder verliezen aan antioxidantcapaciteit.

Kortom, prei heeft heel wat meer in zijn mars dan eerst gedacht. Vanwege zijn bioactieve componenten mag de prei gerust meer gegeten worden, zowel de groene bladeren als de witte schacht. Bovendien groeit prei ideaal bij ons klimaat en is heel het jaar door beschikbaar. Daardoor kan ze aan een scherpe prijs aangeboden worden in de winkel, wat dan weer goed is in tijden van economische crisis. Prijs jezelf dus gelukkig!
