Aanbevelingen aan Transitie UGent ter versterking van het draagvlak voor een duurzame vleesconsumptie. Een literatuurstudie en empirisch onderzoek bij studenten.

Onze vleesconsumptie is niet duurzaam

Een hoge vleesconsumptie zit ingebakken in onze westerse eetcultuur. Velen beschouwen het als een belangrijke bron van culinair genot en een vanzelfsprekend onderdeel van de maaltijd. Steeds meer mensen zijn zich echter bewust van de talrijke duurzaamheidsproblemen die vlees met zich meebrengt. Benjamin De Groeve, masterstudent in de Milieusanering en het Milieubeheer aan de Universiteit Gent, stelde in zijn masterproef de vanzelfsprekendheid van vlees in vraag.

Een felbegeerd goedDe centrale positie van vlees in ons westerse dieet is vrij recent. Vroeger was vlees nog een luxeproduct, voorbehouden voor speciale aangelegenheden en de welgestelde burgerij. Door een groeiende welvaart zijn mensen steeds meer vlees beginnen eten en is vlees het basisproduct geworden zoals we het vandaag kennen. In snel groeiende ontwikkelingslanden zet deze trend zich haastig verder. “Deze trend is niet duurzaam,” stelt De Groeve, “want onze vleesconsumptie heeft nu al een aanzienlijke impact op ons leefmilieu en het welzijn van mens en dier.”

Een miskende milieu-impactVlees is een erg inefficiënte manier om voedsel te produceren. Om vlees te produceren is er vee nodig (kippen, varkens, koeien), dat op zijn beurt veel veevoer nodig heeft. Veel veevoer betekent heel veel land, water en energie. Wereldwijd wordt 70% van de bewerkbare landbouwgrond opgeofferd voor de productie van veevoer, terwijl er voor 1 kg rundvlees in totaal meer dan 15.000 l water nodig is. In Latijns-Amerika worden aan een snel tempo regenwouden gekapt om er weilanden voor runderen en landbouwgronden voor sojavoer van te maken. Door deze ontbossingen wordt een enorme rijkdom aan dier- en plantensoorten met uitsterven bedreigd. Onze vleesconsumptie is ook een hoofdoorzaak van de huidige klimaatsveranderingen: de veeteelt stoot namelijk meer broeikasgassen uit dan alle transport in de wereld samen. Ten slotte zorgt onze vleesconsumptie ook voor een ernstige vervuiling van water door een overmatig gebruik van kunstmest en pesticiden bij de veevoerproductie. Een overmaat aan mest afkomstig van de veeteelt draagt verder bij tot deze vervuiling.   

… versterkt sociale ongelijkheidDe grote impact van vlees op ons leefmilieu heeft belangrijke sociale gevolgen. Om onze hoge vleesconsumptie in het Westen te onderhouden verbruiken we veel landbouwgrond en water in ontwikkelingslanden. Ontwikkelingslanden kunnen deze natuurlijke hulpbronnen echter zelf goed gebruiken om hongersnood en waterschaarste tegen te gaan. Deze landen zijn ook minder bestand tegen de vervuiling die vleesconsumptie met zich meebrengt en ondervinden het meeste nadeel van de klimaatsveranderingen, terwijl het Westen hiervoor de grootste verantwoordelijkheid draagt. De Groeve: “De hoge vleesconsumptie in westerse landen vormt niet alleen een weerspiegeling van sociale ongelijkheid: ze draagt er ook toe bij.”

Schadelijk voor onze gezondheidMaar ook in westerse landen bedreigt vlees het welzijn van mensen. Een te hoge consumptie van rood en verwerkt vlees staat er in verband met tal van welvaartziekten, zoals hart- en vaatziekten, obesitas, diabetes en kanker. Hoewel vlees in gebalanceerde hoeveelheden een goede bron is voor eiwitten en een aantal micronutriënten (ijzer, zink, selenium en vitamines B), is vlees niet noodzakelijk voor een gezond dieet: een goed gepland plantaardig dieet biedt zelfs veel gezondheidsvoordelen.

Verder is het zo dat vlees steeds vaker afkomstig is van grootschalige ‘vleesfabrieken’ die in korte tijd massale hoeveelheden vlees kunnen produceren, in tegenstelling tot de traditionele boerderijen. Omdat daar een grote hoeveelheid dieren in kleine ruimtes worden gekweekt vormen deze een ideale kweekvijver voor ziekten. Een overmatig gebruik van antibiotica bevordert de ontwikkeling van antibioticaresistente bacteriën. “Het risico van vleesconsumptie voor de volksgezondheid mag daarom niet onderschat worden.”, vindt De Groeve.  

Vergeten veeKippen, varkens en koeien zijn welzijnsgevoelige dieren. In vleesfabrieken worden ze echter vooral beschouwd als een gebruiksmiddel om vlees te produceren, wat gepaard gaat met veel dierenleed. Doordat de dieren er zo dicht op elkaar worden gehouden, zijn ze meer vatbaar voor ziekten en gedragsstoornissen. Veel dieren lijden onder de gevolgen van een doorgedreven kunstmatige selectie en onder aanpassingen door fysieke ingrepen (castreren, knippen van tanden en hoorns …) die worden toegepast om aan economische eisen te voldoen. Meer vlees betekent dus ook meer dierenleed. Als we alle welzijnsgevoelige dieren willen respecteren valt het volgens De Groeve bezwaarlijk duurzaam te noemen om ze louter te gebruiken als een economisch middel.

De toekomst van vlees?Veel wetenschappers zijn het erover eens dat de duurzaamheidsproblemen verbonden aan vlees enkel opgelost kunnen worden als mensen substantieel minder vlees gaan eten. Om dit te realiseren is een inzicht nodig in de factoren die de vleesconsumptie beïnvloeden. Effectieve strategieën om de vleesconsumptie te verduurzamen spelen in op deze factoren. Hierbij gaat De Groeve uit van het model van de 4 E’s: enable, encourage, engage en exemplify.

‘Enable’ betekent dat minder vlees eten mogelijk moet worden gemaakt, bijvoorbeeld door een vlot toegankelijk, betaalbaar en aantrekkelijk aanbod van duurzame alternatieven voor vlees beschikbaar te stellen. ‘Encourage’ betekent dat minder vlees eten aangemoedigd zou moeten worden. Dit kan door te werken met prijssignalen en door duidelijk te maken dat plantaardige voeding ook lekker, gezond en goedkoop kan zijn. ‘Engage’ betekent dat men mensen dient te betrekken. Hiervoor kan men diverse sociale activiteiten organiseren zoals informatiecampagnes en kookworkshops. Ook onderwijs speelt hierbij een belangrijke rol. ‘Exemplify’, ten slotte, houdt in dat organisaties of mensen met een voorbeeldfunctie zelf het goede voorbeeld geven.    

Samen voor een duurzame universiteitDe Universiteit Gent geeft het goede voorbeeld en zet zich in voor een duurzame vleesconsumptie. Uit een online bevraging van De Groeve bij 194 studenten blijkt echter dat weinigen dit toejuichen. Aangezien veel studenten (39%) aangeven weinig te weten over de impact van vleesconsumptie op het milieu, de gezondheid en dierenwelzijn, raadt De Groeve aan de studenten hierover te informeren. De gezondheidsimpact verdient daarbij de meeste aandacht, omdat de studenten hiervoor de grootste belangstelling tonen. Verder benadrukt De Groeve het belang van een positieve beeldvorming van alternatieven voor vlees, want meer dan 80% van de studenten heeft weinig ervaring met vleesalternatieven. Al bij al blijft De Groeve optimistisch: “Hoewel de vleesconsumptie wereldwijd toeneemt, is in westerse landen het tij aan het keren: een groeiend aantal mensen kiest voor minder vlees en meer plantaardig.”
